Easy Garlic Mashed Potatoes

3 potatoes, unpeeled
1 clove garlic, minced
2 14 oz cans of chicken broth
1/2 stick of butter or margarine
Fresh Cracked Pepper

Place potatoes in microwave and bake until done. Place in large bowl and mash using potato masher.

Pour two cans of chicken broth into pot, and turn burner on high. Add butter and cracked pepper to broth to taste. Add mashed potatoes and minced garlic.

Boil until chicken broth is evaporated, stirring frequently as broth boils down.

When broth is completely gone, and potatoes are at desired consistency, remove from heat and add butter, salt, and pepper to taste.

Serves 2-4 depending on apetites and serving sizes.

(Hint*= Double or triple the recipe and set some aside for later use in spudwiches and stew pie).
