Spudwich

(Pictured at right served with eggs)

2 potatoes
8 slices turkey bacon
8 slices potato bread
4 slices cheddar cheese
Butter
Chicken Broth, or water.
Garlic (Optional)
4 Eggs (Optional)
4 slices of Salami (Optional)

Take two baking potatos, and bake them in the microwave. Mash them, skins on. Add a little water or chicken broth to them to help congeal them together (not much. If you add too much, put them in a skillet and reduce some of it down). You're going for regular mashed potato consistency here. At this point, you may add some minced garlic to your potatoes if you like (refer to my "Easy Garlic Mashed Potatoes" recipe for a great way to prepare them)!

Heat up your griddle or skillet over low to medium low heat.

Smoosh the mashed potatoes into patty form, and fry until golden brown. Flip - repeat. (the potato cakes may fall apart a little, don't worry if they do.)

Fry 8 slices of turkey bacon.

Butter one side of 8 slices of potato bread (or any kind, but potato bread works pretty well for this recipe).

*Place 2 pieces of bacon, a slice of your favorite cheese, and a potato patty between two buttered slices of bread, making sure buttered sides remain on the outsides.

Place the sandwiches on the griddle or skillet, flipping when one side is golden brown like a grilled cheese. Repeat. Remove from stove, and serve. Makes 4 Spudwiches.

[* - You may also fry one slice of salami per sandwich, or for a great breakfast add one fried egg!]
